Dick Dooley has been a bartender for over 20 years. He’s tended bar from Seattle to the Virgin Islands and a few cities in between. His first bartending gig was at a skid row bar in Tucson, and his last one was at a country club in the foothills. He’ll tell you that he’s glad he did it in that order. It was at this country club that he realized that bottled margarita mixes were awful. He set out to develop a mix that delivers the perfect balance of sweet and tart notes. It was only after generous “home testing” that he arrived at the recipe for Dick’s Mix. Dick’s Mix is a liquid concentrate margarita mix made from the best ingredients, such as fresh lime juice, organic sugar and organic agave nectar. It is the most direct route to the perfect margarita, mojito or Collins. Some fans of the mix have used it to marinate seafood before grilling. When preparing margaritas, Dick recommends only using 100% agave tequila and a premium orange liqueur and never triple sec. Using a brandy-based orange liqueur adds an additional flavor component that always satisfies. He also recommends using a short non-stemmed glass for serving margaritas and when it comes to salting the glasses, to salt at least an hour before serving. This will allow enough time for the salt to adhere to the rim and not immediately fall into your drink. Also, salting only half the glass eliminates the need to ask guests whether or not they’d like salt.
